The functionality of this pasteurizer is as follows:
It receives the liquid egg from the cold tank,
heats it up to the expected pasteurization temperature (65º-67º)
keeping it for 3 or 5 minutes in the retention circuit,
to then pre-cool it, by exchange of plates,
with the entry egg and definitive cooling by exchange
with ice water in the first section of the plates. Flow: 500 liters/h.
